Needless to say, Tiger Woods is unlikely to have a favorite garlic recipe. This recipe for Papaya Salad comes from Chef Pitak Srichan at the Four Seasons Chiang Mai — the favorite hotel of Tiger’s one-time mistress, Rachel Uchitel. (Payback’s a bitch).
2 c. green papaya, shredded or julienned
1/3 c. ground roasted peanut
s 1/2 c. palm (or brown) sugar
1/4 c. green beans
2-3 bird’s eye chillies
1/2 c. lime juice
7 cloves of garlic
1/3 c. fish sauce
1/4 c. dried shrimp
1/4 c. cherry tomatoes
Pound the garlic, chillies, dried shrimp and peanuts. Add the lime juice, fish sauce and palm sugar and mix. Add the papaya, long beans, cherry tomatoes and chillies and pound lightly. Serve with sliced cucumbers.
